Cuisine...

 

The growth of tourism in the last few years has brought a bounty of

new, elegant restaurants to the Cusco area.  We have sought out

the best, from haut cuisine to out-of-the-way cevicherias to pubs

with food you wouldn't believe.   Dining on this tour is

guaranteed to be a gustatory joy.

 

Here is a sampling of menu selections:

 

Typical Peruvian shredded boiled chicken served in a creamy sauce with nuts parmesan cheese and mirasol chile peppers.

Braised lamb shank with potato rocoto and confit garlic.

Crayfish and yellow potato gnocchi with
creamy rocoto chili pepper sauce.

MAP (Museo de Arte Precolombino)     

 

A tender chicken breast laden with a tantalizing 
fungi porcini  & wild mushroom sauce, accompanied by
spicy fried polenta.

Soft red trout from Langui  barbequed and laden with a fragrantcoconut milk and coriander  leaf salsa  accompanied by friedsweet potato gnocchi  on a bed of wasabe & sesame cream.

A fine piece of beef fillet char grilled bathed in a sweet berry
and gorgonzola sauce....And to shake the senses, it is accompanied by parsley and whiskey risotto

Fresh tuna seared on the grill and served rare, bathed in a
typical Peruvian-barbecue "anticucho" sauce of a variety of
chilies, accompanied by a creamy yellow potato mash with
Serrano cheese & the herb of the region, "huacatay".

A tender fillet of Alpaca spiced up with a creamy four-pepper
sauce and served with a crispy yucca souffle & roasted tomatoes.
